I love having fresh fruits and vegetables in the house. Sometimes, I’m overwhelmed with how to use everything, but if I don’t have them, it’s hard to eat well.
Growing up, my mom always loaded the house full of our favorite fruits and veggies, and it never failed, some went to waste. Not intentionally of course. Some got buried. Some were saved for a meal plan that never came to be. As a stay at home mom, we can’t let things go to waste. I never know how to plan or what to make (our weekly HomeCraftedHearts Dinner Menu will help solve that).
My solution? Bountiful Baskets. I was introduced to Bountiful Baskets last summer by none other than, our very own, Karissa. Bountiful Baskets is a co-op run by volunteers to get amazing deals on produce and other fresh goodies. I didn’t jump on board right away. But I watched her gather her baskets a few times and decided to give it a whirl. I haven’t stopped since! I even volunteer when I can now.
They have a borage of options. I always get a conventional basket, which is two round hampers full of fruits and veggies. The downside, you don’t always know what’s coming. But I have yet to be disappointed. Bountiful Baskets helps me get creative with my meal planning. One of my last baskets had so much, I was overwhelmed. On top of my bountiful fruits and veggies, I got 5 bundles of cilantro. I HATE cilantro. But I couldn’t let it go to waste. I made a huge batch of fresh green pico de gallo with avocado and other green ingredients. It was easy. It was also versatile.
One night, I just added it to my nachos. Another night I added it to quesadillas. And I even made my own Chipotle, clean, burritos. I diced up 4 green tomatoes, an onion, 2 green bell peppers, 2 avocados, one lime squeezed, and I added a small can of green chilies. Serve it with black beans and cilantro lime rice, your favorite toppings, and you have your own Chipotle burrito! Everything but the green chilies came from my basket. And that was only a few of the ingredients.
- 4 Green Tomatoes (Red Tomatoes are great too)
- 1 Onion
- 2 Green Bell Peppers
- 3 Avocados
- 1 Lime Squeezed
- 1 C Cilantro
- 4 oz can of Green Chilies
- Dice Tomato, Onion, Bell Pepper, and Avocados
- Combine Them in a Bowl
- Squeeze Lime into The Bowl
- Stir In Canned Chilies and Cilantro
- Add some fresh jalapenos for some spice!
